On this Tasty Tuesday, I wanted to share a few recipes that might inspire you for bringing your own lunch to work, or eat anytime! Special thanks to Elana’s Pantry, Change of Pace, and Cook Eat Paleo.


Paleo Bread By: Elena’s Pantry

2 cups blanched almond flour • 2 tablespoons coconut flour • ¼ cup golden flaxmeal • ¼ teaspoon celtic sea salt • ½ teaspoon baking soda • 5 eggs • 1 tablespoon coconut oil • 1 tablespoon honey •1 tablespoon apple cider vinegar

Place almond flour, coconut flour, flax, salt and baking soda in a food processor. Pulse ingredients together. Pulse in eggs, oil, honey and vinegar. Pour batter into a greased 7.5 x 3.5 magic line loaf pan. Bake at 350° for 30 minutes. Cool in the pan for 2 hours.


Paleo Chicken Salad By: Change of Pace

Cooked and chopped chicken breast • Chopped almonds • Red grapes cut in half • Mashed avocado • Lots of salt and pepper • Bibb lettuce leaves (you could also use romaine)

Mix the first six ingredients together in a bowl, season with salt and pepper, and then spoon onto lettuce leaves.  Roll up and enjoy!


Snack Mix By: Cook Eat Paleo

3 cups mixed nuts (I used equal parts sliced almonds, walnuts and cashews) • 1 tablespoon garlic infused olive oil • 1-2 teaspoons smoked sea salt, to taste • 1 teaspoon smoked sweet paprika • 1/4 - 1/2 teaspoon smoked hot paprika, to taste

    Preheat oven to 325 degrees. Combine nuts in a large bowl and toss with olive oil until well coated. Combine salt and spices in a small bowl. Sprinkle over nuts and stir until well combined. Spread nuts in single layer on baking sheet. Bake 15-20 minutes or until lightly browned and crispy.
