Carrot Egg Bacon Muffins by: Ancestral Chef

4 eggs • 1/2 cup coconut cream (the top cream from a refrigerated can of coconut milk) • 1 cup carrots, shredded (I used my food processor's shredding attachment) • 1/2 cup bacon bits • Bacon fat for greasing muffin pan or muffin cup liners

Preheat oven to 350F. Mix all the ingredients together well in a large mixing bowl (I use an electric mixer). Pour into muffin cups so that there's an equal amount in each cup. Bake for 30 minutes. Let cool. Enjoy immediately or store in refrigerator for up to 5-7 days

Breakfast Sausage By: Elana’s Pantry

1 1/2 pounds organic ground pork or turkey • 2 tablespoons minced fresh sage • 1 tablespoon minced fresh rosemary • 1 tablespoon honey • 1 1/2 teaspoons sea salt • 1 teaspoon freshly ground black pepper • 1 tablespoon olive oil

In a large bowl, combine the ground pork, sage, rosemary, honey, salt, and pepper, using your hands to mix the ingredients thoroughly.

Using a 1/3-cup measuring cup, form the mixture into 8 patties, each about 21/4 inches in diameter.

Heat the olive oil in a large skillet over medium-low heat. Cook the patties, turning them once and gently pressing them down to flatten, for 5 to 8 minutes per side, until golden brown and crispy. Transfer the patties to a paper towel–lined plate and serve.

2 Ingredient Paleo Pancake By: Ancestral Chef

1 Ripe Banana • 1 Egg

Blend the egg and the banana in a blender to form a batter. Place 1 tablespoon of coconut oil into a frying pan and pour in the batter in a spiral to create a thin pancake. Let the pancake cook for around 10 minutes before flipping it. After flipping it, let the other side cook for around 10 minutes.
